Where to start?

I'm looking for a little advice from the pro's here.

I'm trying to decide on a few different Jets to start with. It has a brand new Pro Circuit platinum pipe w/ Pro Circuit power core lll silencer, 4° timing advance, KOR lightened flywheel, KOR slight bore job w/ matched piston, KOR custom head work, air box lid removed, and a reed spacer.

Now I look on Pro Circuit's website and it just says for this pipe: Main-240, Pilot-32.5, Air screw stock

My question is where you guys would recommend starting out at?
 
Another question I have... Do you guys try to adjust the idle or anything before the initial 3 heat cycles of the break in? Or do you just start out with the 290 main, 32.5 pilot, and air screw out 1.5... do the heat cycles regardless of how it wants to run, then fine tune it after???
 
Won't hurt especially if it won't idle. If it's even just new rings you shouldn't keep it at constant rpm, therefor I blip the throttle until cyl is very warm to touch (full palm) shut off, let cool, do it again.
