ok so i polished my stock grab bar and it turned out great, it took about 1 and a half hours for sanding down the old paint by hand also with a sander, then i used a drywall sanding sponge lol to smooth it out and get it shiny, then used some mothers on it for the finishing touch. as long as you maintain the shine it wont rust or anything...

ill bet you could hit it with a couple coats of clear (minor wetsanding between coats) and it would seal it from rust, at least for a little while
 
The only problem with applying a clearcoat over a highly polished surface, is that the clear has nothing to bind too, and is very subject to chipping and flaking.

The surface could be abraded back a little with steel wool, the clear would now have a chance to key.

The shine will come back when clear is applied.
