Dont sweat it, we all have to start somewhere. You are asking good questions, and you will be going strong in no time! We were all newbys at one time. Just be patient and be easy on it till you get it all checked out. I found a couple links that may help.
Since its a newly assembled top end, do a leak down test. Even new gaskets can leak. And air leaks can cause it to run lean and damage parts. Leak down testers can be home made or bought from a member here.

After its all sealed up, need to change the jet in your carb. Might be a good idea to start a separate thread in the carb section listing all your engine mods to find a reccomended starting jet size. After you get the baseline jetting, and your oil injection worked out (if you keep it or eliminate it), start with a fresh tank of fuel and warm it up and do a plug chop. That will give you an indication if the engine is running lean or rich (air to fuel, not fuel to oil). What you find from this will give you an idea where your jetting is. What works on one engine, may not be the same for yours, and weather conditions can affect this also.
