Stick to 240s BigBore

I have a 2000 Blaster and the motor is locked. I was going to order a Vito’s 240 kit with a +3mm stroker. I just had a few questions. Could I run the stock carb and get it rejected? If so what size jets?
Would the stock pipe be fine to run for now until I get a am pipe?
Would the fuel mixture stay the same?
And would getting the kit affect the longevity of the motor?

Fuel mixture would stay the same i would believe iv always mixed 32:1. Would be best to have new pipe to let it breathe and im not sure how far up on jets .im looking into doing 240 +3 stroker i have pipe and getting a flat slide lol bigger carb i think
