How would I go about determining jet sizes on a fresh rebuild besides plug chopping since your not supposed to go wot right off the bat
 
What's your mods, exhaust, filter, air temp, elevation? Get us those and we can narrow it down for ya. Look around here too for heat cycles for break ins, there are a lot of opinions out there but I do similar to ken oconnors heat cycles find his vid on youtube

I have a Vitos 240 big bore kit and a dmc alien exhaust front to back stock mikuni carb stock reed valve
 
Yes very true it'd be about almost a 600 dollar lost if I broke it in lean id rather be fat for the entire brake in period juss so I kno wont score my cylinder and then re adjust my jetting with plug chopping after break in period.
 
I usually use a extra dab of 2 cycle oil in the premix aswell for added lubrication. I juss want my jetting to be right so i dont fry my piston

Big red flag, NO, NO, NO.

Do not dream of adding extra oil it causes a lean mix, which cause detonation, will run hotter and can damage the piston.

That extra oil takes the place of fuel, for example changing from 32:1 to 25:1 which that extra dab of oil can easily do, will need at least 1 size larger main jet.

One size main jet wrong can be the cooking of a perfectly good motor.

No extra lubrication is provided, it just makes it smoke more!
 
Well, you're not really going to be in the main jet until the very end of the breakin. And I'll bet the 320 will be close unless it gets colder.
