So what are the nut sizes for the jug and head bolts?

12 x 1.75mm?

And the washers for the heads? #2, #4, #6..etc ????

M8 x 1.25 for the case and head studs.

The washers really should be malleable metal (brass or copper) to allow the proper torquing of the head. You may be able to get away with stainless steel or even galvanized 5/16" washers but if you go that route you'll need to keep a keen eye on the torque wrench and for any leaks afterwards.
